Safe Grilling Tips

There is nothing like a traditional  summer BBQ, the smell of the grill, socializing with friends and family while enjoying the warm temperatures, it’s a summer tradition after all!  But did you know that research has shown grilling meats at high heat  and consuming well­done meats can produce the carcinogens heterocyclic amine (HCA) and polycyclic aromatic hydrocarbons (PAHs), chemicals that have been shown to increase the risk of  pancreatic, stomach, lung, and breast cancer? The good news is you  don’t have to give up your grill, here are some tips on how to make

• Clean your grill thoroughly prior to cooking to help remove any  charred debris that may stick to food  • Consider cutting off pieces of meat that are badly charred
• Pre­cook food slightly before grilling to cut down on PAH’s ­ 60­90  seconds in the microwave reduces grill time and allows some of  the juices to drain beforehand
• Marinades made with lemons and vinegar create a shield changing  acidity and preventing the PAH’s from sticking to the meat
• Try an alternative grilling method such as natural gas or propane
• If you are using charcoal consider a fire starter stick instead of lighter fluid which also emits harsh airborne chemicals
• Finally cut back on the meats and consider grilling veggies instead, there are many delicious grill options. Eggplant, mushroom’s, asparagus, summer squash, corn and peppers are all fantastic
