Vegetarians and non, try this easy savory baked tofu in salads or just on its own as a delicious snack! Make sure with any soy products you look for varieties that are non-GMO and organic.
1 Brick of Extra Firm Tofu
3 Tbsp Tamari, Soy Sauce or Braggs
½ a lemon
1 tsp of garlic powder
¼ – ½ a tsp of rice vinegar
Drain and dry the tofu. You can wrap the tofu in some paper towels and set in a colander in the sink to drain. Once tofu is mostly dry slice into thin pieces about a ¼ inch. Take a large ziploc bag and add the soy sauce, juice from the lemon, rice vinegar and garlic powder. Add the tofu slices to the bag and shake to coat with marinade. Place in fridge and let marinate for a minimum of 2 hours, longer is better and you can even leave it overnight. When you are ready to cook, take a baking sheet and coat using an oil spray. Sprinkle the tofu generously with Nutritional Yeast and bake for 20 -30 minutes depending how brown you prefer it. Turn once about half way through cooking and if you are a fan you can add an additional sprinkle of nutritional yeast upon turning. Let cool and enjoy. You can also store in the fridge for use later.
