Easy Kimchi

Fermented foods can contribute to good health.  Foods like Kimchi,  raw sauerkraut, tempeh and miso are excellent choices. Try this easy Kimchi at home!

Total Time: 4 hr 15 min Prep: 15 min Inactive: 4 hr

Makes 4-6 servings

INGREDIENTS: 

• 3 chopped red jalapenos
• 4 garlic cloves
• 1/4 cup sugar
• 2 tablespoons chopped ginger
• 1 teaspoon red pepper flakes
• 2 tablespoons each fish sauce
• Salt
• 1/2 head napa cabbage
• 6 scallions

DIRECTIONS:

Pulse chopped red jalapenos, garlic cloves, sugar, chopped ginger, red pepper flakes, fish sauce and salt in a food processor. Cut 1/2 head napa cabbage and 6 scallions into 2-inch pieces; toss with the jalapeno paste.   Refrigerate at least 4 hours.  Enjoy by itself as a side dish or as a topping for foods like, tacos, steak, rice dishes, eggs, pretty much anything.
