Cauliflower Chick Pea Lime Curry

This delicious recipe packs a high protein punch combining nut butter and garbanzo beans (aka chick peas).  Plus the heart healthy, cancer fighting, fiber rich cauliflower   provides your important veggie fix!   And it just happens to be one Director of  Marketing’s, Gail’s favorites!

Cauliflower Lime Curry

  • 2 limes
  • 1 14oz can Coconut Milk
  • 1 med onion thinly sliced
  • 1 tsp. Curry powder
  • Salt & Pepper to taste
  • ¼ c. Organic peanut butter
  • ¼ c. water
  • 1 head cauliflower
  • 1 can (14oz) Garbanzo beans

Feel free to be more liberal with the spices and lime to make it extra flavorful! Try adding a little turmeric and/or cumin to the mix for an extra healthy punch!

In 5–6 quart saucepan heat ½ c. coconut milk on medium high to boiling.  Add onion, curry powder, & ¼ tsp salt (and any other spices).  Cook 5-6 min. till pot is almost dry & onion begins to soften stirring frequently.  Into pot with onion whisk organic peanut   butter, water, remaining coconut milk, lime juice (to taste).  Heat to boiling on high. Reduce heat to medium.  Add cauliflower and beans and cook till cauliflower is tender stirring occasionally. Serve over rice or quinoa and Enjoy!
