17 Aug Curried Chicken Salad with Apples and Raisins

Want a vegan/vegetarian version? Try a meatless “chicken” option and use safflower mayonnaise.

• 1/4 cup low-fat mayonnaise
• 1 teaspoon curry powder
• 2 teaspoons water
• 1 cup chopped skinless, boneless Grilled Chicken (about 4 ounces)
• 3/4 cup chopped apple (about 1 small)
• 1/3 cup diced celery
• 3 tablespoons raisins
• 1/8 teaspoon salt

Squeeze of fresh lemon juice

Optional 2 tablespoons of walnuts or pecans for extra protein and some healthy fat!

Combine mayonnaise, curry powder, and water in a medium bowl, stirring with a whisk until well blended. Add the Grilled Chicken, chopped apple, celery, raisins, lemon and salt; stir mixture well to combine. Cover and chill.  Serve on whole grain or gluten-free bread and add or serve on a bed of greens for an even healthier option!
