In today’s world almost everything you eat at restaurants, conventional grocery stores and fast food restaurants has been processed and contains non-natural, or artificial ingredients that can be difficult for your body to identify and process. Continuing to eat processed foods with artificial ingredients for extended periods of time can have adverse effects on your health and the way you feel.

In addition, almost all conventional produce have been exposed to high levels of chemical pesticides and chemical fertilizers. Tunie’s offers only 100% certified USDA organic produce. Not only is it healthier for you, but we think it tastes a heck of a lot better!

Also Known as
Acesulfame-K, Ace-K, or Sunett.

Use
It is used with other artificial sweeteners in diet sodas, ice creams and almost any sweetened product. It is also in gum, mouthwash and toothpaste.

Reasons to avoid
It is linked to lung and breast tumors in rats.

Annatto

Also Known as
Annatto is a naturally derived yellow or red food coloring agent, that comes from the carotenoid, and bixin in the seeds of a tropical tree called the achiote.

Use
Annatto is a food coloring and can be found in a myriad of processed foods, pharmaceuticals and cosmetics.

Reasons to avoid
It can cause hyperactivity in children as well as allergic reactions, hives and asthma.

Azodicarbonamide

Also Known as
azobiscarboxamide, azodicarboxamide, azobiscarbonamide, diazenedicarboxamide, ADA and ADC.

Use
It is used as a food additive in the form of a flour bleaching agent in bagels and buns.

Reasons to avoid
It can cause asthma, allergic reactions and is a possible carcinogen.

Bleached Flour

Use
Bleached flour is a refined grain. This means it is a carbohydrate, but has a high glycemic index and less fiber. The bran and the germ of the wheat contain most of the fiber and nutrients and both are removed during the milling process.

Reasons to avoid
For diabetics, refined grains quickly raise blood sugar levels and the body is unable to quickly restore balance because of the inability to produce enough insulin.

Brominated vegetable oil (BVO)

Also Known as
Not required to be listed on food labels.

Use
It keeps flavor oils in soft drinks suspended. It is found in Mountain Dew among other sodas.

Reasons to avoid
It can cause organ damage and birth defects, increases triglycerides and cholesterol.

Butyl cellosolve

Use
It is a chemical that is found in a wide variety of household cleaning agents – glass cleaners, oven cleaners, general degreasers, spot removers, air fresheners, and carpet cleaners, among other things. It is also known as butyl glycol, Dowanol, and ethylene glycol.

Reasons to avoid
It has made it on the list of California’s toxic air substances, and some animal studies indicate that it produces reproductive problems, such as testicular damage, reduced fertility. In humans, it can irritate mucous membranes and cause liver and kidney damage.

Calcium peroxide

Use
Calcium peroxide is commonly used in the baking industry as a bleaching agent for flour.

Reasons to avoid
Calcium peroxide is permitted to be added to flour and baking mixes at specific levels.

Camauba wax

Use
It is used in chewing gums and in glazing of certain foods.

Reasons to avoid
It can cause cancer and tumors.

Chlorinated phenols

Use
Are found as wood preservatives, fungicides and herbicides.

Reasons to avoid
With chronic exposure it can cause night sweats, neurological disturbances, bronchitis, weight loss, headache, and fatigue, also liver and kidney damage and a depressed immune response.

Citrus red #2

Use
It is said to color oranges

Reasons to avoid
It can cause cancer if you eat the peel.

Di-methyl and Methyl silicone

Use
This ingredient is added to some leading and store brands of cooking sprays as an anti-foaming agent, shampoos, lubricating oils, processed foods and fast food items such as McDonald’s Chicken McNuggets and French fries.

Disodium guanylate

Use
It is a chemical additive, which enhances or intensifies savory flavors. It is used in combination with monosodium glutamate (MSG). This combination of additives can commonly be found in the instant noodle flavor packet, in cured meats, salty snacks, and in restaurant food.

Reasons to avoid
Disodium guanylate, by itself, is not toxic. It is a substance usually made from fish which is related to MSG, therefore it is not safe for infants under 12 weeks old.

Ethyl-vanilin

Use
It is a chemically synthesized flavoring agent related to vanillin or artificial vanilla. Ethyl vanillin is used in chocolate, maple syrup, ice cream, and beverages, and is actually utilized in many fragrances as well.

Reasons to avoid
Ethyl vanillin is safe to use in small quantities, however it may be a skin and eye irritant if it comes in direct contact with these organs. Inhalation of ethyl vanillin is also not advised.

High fructose corn syrup

Also Known as
HFCS

Use
It is found in numerous products such as sweetened drinks, juices, baked goods, breads, cereals, candy, condiments, baking ingredients, various sweets, crackers, cough syrups, dairy, pickles and relish, jams, salald dressings, sauces, lunchables.

Reasons to avoid
Sweetener made from corn starch. Made from genetically-modified corn. Causes obesity, diabetes, heart problems, arthritis and insulin resistance.

Lye

Also Known as
sodium-hydroxide

Use
It can also go by the name sodium-hydroxide and it is used to cure many types of food, including lutefisk, olives (making them less bitter), canned mandarin oranges, hominy, lye rolls, century eggs, and pretzels. It is also used as a tenderizer in the crust of baked Cantonese moon cakes, and is present in drain de-cloggers and oven cleaners.

Reasons to avoid
Lye reacts with aluminum, magnesium, galvanized zinc, tin, chromium, brass or bronze—producing hydrogen gas, which is dangerous upon contact.

Mono- and di-glycerides

Use
Distilled Monoglycerides are used to extend the shelf life and act as an emulsifier in baked goods, gum, oils, frozen desserts, dairy products and other processed foods. Distilled Monoglycerides are used as an emulsifier in icing, margarine, shortening, and cream fillings.

Reasons to avoid
They carry the same health risks associated with consuming any saturated fats.

Nonyl phenol ethoxylate (NPA)

Use
It is used as a surfactant, also used in textile processing, pulp and paper processing, paints, resins and protective coatings, oil and gas recovery, steel manufacturing, pest control products and power generation. A variety of cleaning products, degreasers and detergents are also available for institutional and domestic use.

Reasons to avoid
There is little evidence for any significant effects of exposure to nonylphenol ethoxylates on human health. However, exposure to high levels of nonylphenol ethoxylates may cause irritation of the lungs, digestive system, skin and eyes. Long term exposure can disrupt hormones and result in reproductive and endochrine ailments.

Orange B

Use
It is a food dye that is used in hot dog and sausage casings.

Reasons to avoid
High doses of this artificial coloring are bad for the liver and the bile duct.

Polysorbate 60

Use
It is used as a thickener that in baked goods.

Reasons to avoid
It has been shown to can cause cancer in laboratory animals.

Potassium benzoate

Use
Potassium benzoate is used as a food preservative and is added to soft drinks. Potassium benzoate is also used in a number of acidic products like cordials, salad dressings, alcoholic beverages, vinegars, condiments and sauces.

Reasons to avoid
When mixed with vitamin C, potassium benzoate forms benzene, which is a carcinogen. Benzene is known to cause liver and kidney cancer.

Potassium metabisulfite

Use
It inhibits bacteria and yeast growth and is added to wine or juices.

Reasons to avoid
It is known to be toxic

Propyl gallate

Use
It is found in meats, popcorn, soup mixes and frozen dinners.

Reasons to avoid
It has shown to cause cancer in rats and is banned in some countries.

Red #40 and Red #2

Use
It is found in many foods to alter color. All modern food dyes are derived from petroleum.

Reasons to avoid
It is a carcinogenaccording to some studies. It can also cause hyperactivity in children and is banned in some European countries.

Sodium aluminum sulfate

Also Known as
Sodium aluminum sulfate is a chemical compound in the class known as alums.

Use
It is most often added to baking powder as a leavening agent, which brings out carbon dioxide in batter and dough. Sodium aluminum sulfate is also used to make foods acidic.

Reasons to avoid
Effects of aluminum toxicity appear gradually; aluminum toxicity adversely affects cognitive processing, memory, and mood.

Sodium diacetate

Use
It can be used as a substitute for vinegar in order to impart a sour, salty and tangy flavor to snacks, breads, soups, ketchup, meat and poultry.

Reasons to avoid
The United States’ Environmental Protection Agency (EPA) has classified sodium diacetate under Toxicity Category IV, which is the least toxic of the four toxicities. However, if used too much, it may result in weight loss, appetite loss or increased white blood cell count.

Sodium hydroxide

Also Known as
Lye or caustic soda

Use
It is also known as caustic soda and is used in processing soft drinks, cocoa and chocolate, as well as in caramel coloring process. It is also used to scald poultry, potatoes and to thicken ice-cream. Sodium hydroxide is found in domestic drainage cleaners common in households.

Reasons to avoid
Direct contact or excessive use of sodium hydroxide may cause mild to severe chemical burns. An inhalation of sodium hydroxide may result in irritation in the gastrointestinal tract, respiratory tract, vomiting, diarrhea, abdominal pain and nausea. Due to high sodium content, those with diabetes, hypertension, heart issues or women that are pregnant should avoid ingesting sodium hydroxide.

Sodium propionate

Use
It is a preservative used primarily in processed bread to prevent the growth of mold.

Reasons to avoid
There is no FDA limit on how much of this additive can be used, however there is nickel used in the production of sodium propionate and its residue is present in any final product.

Stannous chloride

Use
It isused to preserve and color in food and beverages and can be found in canned or bottled pasteurized fruits, water-based flavored drinks, especially sports, energy and electrolyte drinks. It may also be found in canned vegetables.

Reasons to avoid
It is regarded as safe for human consumption but, when ingested in excess, may be responsible for gastrointestinal symptoms like abdominal cramps, nausea and diarrhea.

Sulfite

Use
They are used to keep prepared foods fresh.

Reasons to avoid
They can cause breathing difficulties in those sensitive to the ingredient

Vanillin

Use
It is produced synthetically as a cheap alternative to natural vanilla and is used in a variety of products that are artificially flavored.

Reasons to avoid
Vanillin is safe for human consumption, although some studies have shown that it can trigger headaches in those who are prone to migraines.

Aerosol sprays

Use
It is a type of dispensing system which creates an aerosol mist of liquid particles.

Reasons to avoid
Inhalation of particles can be harmful to the lungs and cause irritations, intoxication and allergies.

Artificial flavors

Use
They are chemicals that mimic natural flavors and are used in a variety of processed foods and drinks.

Reasons to avoid
They are linked to allergic reactions, dermititis, eczema, hyperactivity and asthma.

Benzoates

Use
Are used as preservatives in acidic food preparations like wine, alcoholic beverages, cider, vinegar, salad dressing, pineapple food preparations, smoked dried fermented fish and soft drinks.

Reasons to avoid
This food and beverage additive may be implicated in hyperactivity disorders in children, calcium benzoate may also be implicated in gastrointestinal discomfort due to its ability to inhibit digestive enzymes. Potassium benzoate forms benzene when mixed with vitamin C and therefore can become a carcinogen. Benzene is known to cause liver and kidney cancer.

Blue #1

Use
It is used in bakery products, candy and soft drinks.

Reasons to avoid
It can damage chromosomes and lead to cancer.

Brown HT

Use
It is used in many packaged foods.

Reasons to avoid
It can cause hyperactivity in children, asthma and cancer.

Calcium bromate

Use
It is used in bread, rolls, buns and baked goods.

Reasons to avoid
Categorized as “possibly carcinogenic to humans” by the International Agency for Research on Cancer. The FDA has urged bakers to voluntarily stop using it.

Calcium propionate

Use
It is used to increase the shelf life of foods. It is predominantly used in breads, baked goods, processed meat and cultured whey as well as milk derivatives, cheese and butter.

Reasons to avoid
Although calcium propionate is not toxic, reactions like vomiting, nausea, diarrhea and headache can be seen in people who are intolerant to this additive. It can also cause DNA damage.

Caprenin

Use
It is a fat-based substitute, can be used in soft candies and confectionery coatings.

Reasons to avoid
Caprenin is no longer approved for dietary use in Canada due to concerns regarding its ability to raise serum cholesterol.

Chlorine dioxide

Use
It is used in bleaching flour.

Reasons to avoid
It can cause tumors and hyperactivity in children.

Cottonseed oil

Use
It is a by-product of industrial waste produced during cottonseed processing. It is found in cookies, crackers, salad dressings, desserts, packaged breads, personal care products, peanut butter, mayo, margarine.

Reasons to avoid
Cottonseed oil is also absolutely loaded with pesticides, mildly inflammatory in nature, contains natural toxin called gossypol which interferes with potassium metabolism and triggers male infertility.

Dimethylpolysiloxane

Use
It is an anti-foaming, anti-caking agent, and emulsifier in processed foods. It is used in soft drinks, energy drinks, instant coffees, chewing gum, vinegars, cooking oils, confectionary snacks, syrups and chocolates.

Reasons to avoid
Dimethylpolysiloxane is non-toxic but will irritate the skin and eyes along with being a danger if inhaled or swallowed in its raw form.

Disodium inosinate

Use
It is used as a food additive and often found in instant noodles, potato chips, and a variety of other snacks. It is used together with MSG in food preparation and taste enhancement.

Reasons to avoid
It is a purine, therefore those with gout or uric acid kidney stones should limit consumption of purines.

Ethylenediamine tetraacetic acid (EDTA)

Also Known as
Calcium disodium EDTA is made from formaldehyde, sodium cyanide, and Ethylenediamine

Use
It is mainly known as EDTA and is used to help prevent loss of color or flavor. It is mainly found in pickled cabbage and cucumbers, canned potatoes and other vegetables, cooked and canned shrimp, clams and crabmeat, as well as canned mushrooms.

Reasons to avoid
In larger amounts it could cause cramps, nausea, vomiting, diarrhea, headaches, low blood pressure, skin problems, and fever. It is not safe to consume more than 3 grams per day. Too much can cause kidney damage, low calcium levels and even death.

Hydrogenated starch hydrolysate

Also Known as
HSH

Use
It is an artificial sugar alcohol produced from starch. The family of Hydrogenated starch hydrolysates includes hydrogenated glucose syrups, maltitol syrups, and sorbitol syrups, and are found in a wide variety of refined foods.

Reasons to avoid
It has a laxative effect. It is an artificial product and does not occur naturally in fruit or vegetables.

Monosodium glutamate -MSG

Also Known as
MSG

Use
It is used as a flavor enhancer and tenderizer. It is found in many restaurant preparations, meats, chinese food.

Reasons to avoid
It can cause headaches and is linked to nerve damage, heart problems and seizures in animal studies.

Magnesium sulphate

Use
It is often used in tofu

Reasons to avoid
It has been linked to cancer in laboratory animals.

Nutrasweet

Also Known as
Aspartame

Use
It is also known as NutraSweet, Equal, Spoonful, and Equal-Measure, and is found in more than 6,000 products including diet beverages, dairy products, desserts, syrups and tabletop sweeteners.

Reasons to avoid
It is an excitotoxin and thought to be a carcinogen. It can cause dizziness, headaches, blurred vision and stomach problems, memory loss.

Parabens

Use
They can be found in a wide variety of personal care products, cosmetics, as well as drugs.

Reasons to avoid
They can disrupt hormones in the body, and could be linked to breast cancer.

Polysorbate 65

Use
It can be found in ice cream, cake mix, icing, fillings, custards.

Reasons to avoid
Polysorbates often contain chemical contaminants that can potentially be toxic. Often derived from petroleum.

Potassium bisulfite

Also Known as
Potassium hydrogen sulfite

Use
It is also known as Potassium hydrogen sulfite and is used in making alcoholic beverages. It inhibits bacteria and yeast growth.

Reasons to avoid
It is known to be toxic.

Potassium sorbate

Use
It is used in wine as a stabilizer and also used to preserve items like cheese, yogurt, dried meat and fruit and even baked goods.

Reasons to avoid
Prolonged use of potassium sorbate can cause allergic reactions like itching, runny nose, stomach pain and swelling of the throat and mouth. Potassium sorbate is also known to trigger migraines.

Propylene glycol

Also Known as
Better known as antifreeze

Use
It is also known as antifreeze, it is used to thicken dairy products and salad dressings and is added to cosmetics and toiletries to assist these products in retaining moisture for application ease and prolonged shelf life. It is also found in shampoos, deodorants, skin care lotions and room deodorizers.

Reasons to avoid
Its side effects occur with prolonged or direct contact with the eyes resulting in redness, tearing, burning, itching and conjunctivitis. Liquid eye solutions may have greater amounts of propylene glycol as re-wetting agents. Prolonged inhalation from deodorizers can cause irritation of the mucous membranes, wheezing, coughing and shortness of breath.

Saccharin / Calcium Saccharin

Also Known as
Sweet-n-low, Sweet Twin, Necta Sweet

Use
It is an artificial sweetener that is about 300 times sweeter than table sugar. It is used mainly in low-calorie sweetened beverages and gums, but can also be found in some baked goods and diet jellies. Saccharin is in brand name products like Sweet-N-Low, Sweet Twin and Necta Sweet.

Reasons to avoid
Center for Science in the Public Interest (CSPI) has petitioned the FDA to label saccharin as “reasonably anticipated to be a carcinogen”.

Sodium and Potassium nitrites

Use
Nitrites are used as preservatives in cured and deli meats. Sodium and Potassium nitrites preserve the pink color of the meat and adds flavor. Using salts to cure meat and meat products absorbs moisture, inhibiting bacterial growth and preventing spoilage.

Reasons to avoid
Nitrite protein compounds formed in the stomach, which are believed to be cancer-causing, the relation between cancer and inorganic nitrites is being studied. Potassium nitrite or its metabolites can bind to hemoglobin and inhibit normal uptake of oxygen. Sodium nitrite can react with meats to create nitrosamines, which are toxic and have been identified as carcinogens.

Sodium Erythorbate

Also Known as
erythorbic acid or sodium isoascorbate

Use
It is used in processed meats to retain color. It does so by preventing meat oxidation.

Reasons to avoid
Aside from its ability to increase blood pressure, no negative health effects from sodium erythorbate have been noted.

Sodium metabisulfite

Also Known as
also known as pyrosulfite and E223

Use
It is commonly used as a food preservative in dried fruits, potato chips and concentrated fruit juices. It can also be found in bread, cakes, pastries and frozen foods. Sodium metabisulfite can be also found in wine and beer.

Reasons to avoid
Sodium metabisulfite may cause allergic reactions in people with a known sensitivity to sulfites or other individuals and the signs of these reactions may include hives, swelling, bronco constriction, shortness of breath and anaphylactic shock. If contact with the skin happens the area in effect will turn red and itchy. If pure sodium metabisulfite comes into the contact with the eyes it may result in irreversible corneal damage.

Sodium pyrophosphate

Use
It is used for a number of baked goods, such as bread, cake, cookies, pancakes, pudding, jellies and more. It is also used in dough and flour mixes, Non-alcoholic beverages, jams, processed cheese and butter.

Reasons to avoid
Excessive inhalation or contact with sodium pyrophosphate may lead to a troubled gastrointestinal or respiratory tract, as well as irritation of the skin and eyes. Further reactions may lead to nausea, diarrhea, vomiting or abdominal pain. Those who are pregnant or have diabetes or heart disease should limit consumption of sodium pyrophosphate due to the sodium content.

Sucralose

Also Known as
Splenda, Sukrana, SucraPlus, Candys, Cukren and Nevella.

Use
It is used in 4,500 food and beverage products, most commonly candy, sodas and cereal.

Reasons to avoid
It can cause swelling of liver and kidneys and a shrinkage of the thymus gland.

Tert butylhydroquinone

Use
It is used to preserve fish products.

Reasons to avoid
It could cause stomach tumors at high doses.

Yellow #5

Use
This artificial coloring is used in desserts, candy and baked goods.

Reasons to avoid
It is thought to cause kidney tumors, according to some studies.

Aluminum Phosphate

Use
It is a preservative in some packaged foods like frozen pizza and baking powder. It is also used in fertilizers, ceramics and vaccines.

Reasons to avoid
Effects of aluminum toxicity appear gradually; aluminum toxicity adversely affects cognitive processing, memory, and mood.

Aspartame

Also Known as
NutraSweet, Equal, Spoonful, and Equal-Measure

Use
NutraSweet, Equal, Spoonful, and Equal-Measure, Found in more than 6,000 products including diet beverages, dairy products, desserts, syrups and tabletop sweeteners.

Reasons to avoid
An excitotoxin and thought to be a carcinogen. Can cause dizziness, headaches, blurred vision and stomach problems, memory loss.

BHA and BHT

Also Known as
Butylated hydroxyanisol and Butylated hydroxytoluene

Use
It is a fat preservative, and is used in foods to extend shelf life.

Reasons to avoid
BHA and BHT have been found to produce allergic reactions and affect kidney and liver functions. California’s Proposition 65 recognizes BHA as a carcinogen as it has been linked to cancerous tumor growth.

Blue #2

Use
It is used in candy and pet food beverages.

Reasons to avoid
It can cause brain tumors

Butane

Use
It is used in chicken nuggets to keep them tasting fresh.

Reasons to avoid
It is a known carcinogen.

Calcium disodium EDTA

Use
It is used in foods as a preservative and sequestrant. It is commonly added to canned potatoes, corn, and lima beans to retain color. You will also find this ingredient in dressings, mayonnaise and margarine products. It is used to slow crystal formation in canned crab meat. In canned and carbonated beverages and soft drinks, it is added to retain flavor.

Reasons to avoid
It is toxic to humans in high amounts.

Calcium stearoyl-2-lactylate

Use
They are found in baked goods, tortillas, cereal, chewing gum, dehydrated fruits & vegetables, pancake mixes, instant rice, pudding mix.

Reasons to avoid
There are no known adverse effects

Caramel coloring

Use
It is an artificial coloring that is used in soft drinks, sauces, pastries and breads.

Reasons to avoid
When made with ammonia, it can cause cancer in mice. Food companies are not required to disclose this ingredient if it is made with ammonia.

Citrus red #1

Use
It is an artificial coloring sprayed on oranges to make them look ripe.

Reasons to avoid
It can damage chromosomes and lead to cancer.

Cyclamates

Use
Synthetic chemical which is 30 to 40 times sweeter than table sugar. It is sodas, fruit juice, diabetic foods, desserts, chewing gum.

Reasons to avoid
Animal studies have found this sweetener to becarcinogenic. It caused bladder cancer in rats testicular atrophy in mice.

Dioctyl sodium sulfosuccinate (DSS)

Use
A synthetic, waxy solid used as a wetting agent, solubilizing agent, an emulsifier and thickening agent. It is gelatin desserts, beverages, fruit juice, cocoa products, chewing gum, laxatives.

Reasons to avoid
It may have a laxative effect.

Equal sweetener

Use
It is also known as Aspertame and is found in diet beverages, dairy products, desserts, syrups and tabletop sweeteners.

Reasons to avoid
Aspertame is an excitotoxin and thought to be a carcinogen.It can cause dizziness, headaches, blurred vision and stomach problems, and memory loss.

Green #3

Use
It is an artificial coloring used in candy and beverages.

Reasons to avoid
It may cause bladder tumors.

Lead soldered cans

Use
Cans containing traces of lead.

Reasons to avoid
Ingesting traces of lead through canned fruits, meats and vegetables can reslut in lead toxicity. Lead toxicity can result in many symptoms including abdominal pain, vomiting, sluggishness and fatigue, learning difficulties, irritability and loss of appetite.

Microcrystalline cellulose

Use
It is a refined wood pulp that is used as a texturizer, an anti-caking agent, and even a fat substitute, and an emulsifier. It is often a bulking agent in food production. The most common form is used in vitamin supplements or tablets.

Reasons to avoid
It may cause an allergic reaction in some patients. Because the substance is not absorbed well, symptoms of allergic reactions are likely to be limited to gastrointestinal symptoms such as diarrhea or gas.

Natamycin

Use
It is used in the food industry to prevent fungi or yeast mold from growing on various food products and is predominantly used in dairy.

Reasons to avoid
The acceptable daily intake of natamycin for humans is between 0 and 0.3 grams per kilogram body weight.

Olestra

Also Known as
olean is a sucrose polyester

Use
It is a fat-like substance that is unabsorbed by the body and is used as a fat substitute in a number of snack foods, from potato chips to frozen desserts. In these products, you’ll find it in the ingredient list under it’s brand name, Olean.

Reasons to avoid

Reasons to avoid
When mixed with vitamin C, sodium benzoate forms benzene, a known carcinogen. It may also cause DNA damage.

Use
It is used as a curing agent, an emulsifier and a sequestrate. It is found in cheese, cured meats, sour creams, yogurts, packaged vegetables, ice-creams, seafood, gelatin desserts and milk-based beverages. It is also used as an emulsifying agent and a buffer in dough and flour mixes. It is found in chewing gum as it helps in preventing stain formation.

Reasons to avoid
Overdose of sodium hexametaphosphate (SHMP) can lead to kidney damage, mild to severe gastrointestinal tract irritation, nausea and diarrhea. Also, the compound sticks to calcium ions, while acting as a sequestering agent, which may pose a threat to those suffering from kidney stones.

Sodium phosphate

Use
It is principally used as a preservative agent in canned meats, processed meats, deli meats, processed cheeses and soups. It also works well as a buffer in dough and flour mixes by helping the dough rise and by leavening batter for breaded chicken, fish and cakes.
